In traditional sake brewing, typically only one type of koji mold and one type of yeast are used per batch. However, CHIMERA breaks all conventions by blending three different koji molds and three different yeast strains. This approach may sound almost incomprehensible, as such a method is unheard of in the sake world. Yet, despite its unconventional brewing process, Shirasugi Shuzo masterfully crafts a well-balanced and exquisitely delicious sake.
The aroma is refreshing and elegant, with clear fruity notes of lychee and muscat, accompanied by hints of lemon tea.
On the palate, a fine, gentle effervescence introduces a lively and youthful vibrancy, followed by a bold and voluminous sweet-acidity. The bright and expressive acidity lingers, bringing to mind an explosion of pineapple and grapefruit-like fruitiness. This is beautifully contrasted by the lingering notes of lemon zest and grape skin, delivering an outstanding depth of flavor. As the experience unfolds, the rich umami of rice and koji emerges, adding layers of complexity while maintaining a refreshing and dynamic character.
