This is a new cloudy sake brewed with the brewery’s original ambient yeast, “sanQ.”
The aroma is fresh and vibrant — citrusy acidity hits from the start, followed by the gentle, fluffy scent of steamed rice and a green, grassy note reminiscent of grass.
On the palate, a slightly thick texture carries the creamy, milky rice character typical of cloudy sake.
Layered into this richness are bright, juicy flavors reminiscent of orange and grapefruit, along with a bold, well-rounded acidity that races across the tongue.
A gentle bitterness from the citrus tightens up the lingering rice notes, leading to a surprisingly clean and refreshing finish.
It’s a sake that offers both richness and lightness. Best enjoyed well-chilled.
